By frying them, of course!
A quick basil aioli makes the perfect seasonal accompaniment.
Tomatoes turning red already, Tasia Thompson asks? Use eggplant, squash or zucchini instead.
You can save the red tomatoes for salads, BLTs — or that yummy Southern summer staple, the tomato-and-mayo sandwich.
Short on time — or green tomatoes of your own? No problem. Let Tommy and Tasia make them for you. This dish is available daily at Madeleine Marie’s, 260 Green St., Morgantown, during tomato season.

EASY FRIED GREEN TOMATOES
- 4 green tomatoes
- 1 cup all purpose flour
- 1 cup cornmeal
- 2 teaspoons blackening spice
- 1 cup buttermilk
- 1 quart vegetable oil for frying
Step 1:
Mix dry ingredients into one bowl. Pour buttermilk into another bowl.
Step 2:
Slice tomatoes 1/4-inch thick and soak them in buttermilk.
Step 3:
Dredge tomatoes in dry mixture.
Step 4:
Fry them 4-5 slices at a time until golden brown on both sides.
Serve them over salad topped with balsamic vinaigrette and basil aioli.
QUICK BASIL AIOLI
- 1 cup mayonnaise
- Bunch of fresh basil
- 1 teaspoon lemon juice
- 2 cloves of sautéed garlic
- Salt and pepper, to taste
Combine ingredients in a food processor.
Serve alongside or drizzled over the top of these fried green tomatoes. It’s also delicious as a condiment on sandwiches.
